You already know Chippery chips make a great snack as-is but what about using them for cooking and baking?  Here are a couple yummy recipes for you to try.

Chippery Potato Chip Chicken

INGREDIENTS

  • 2 pounds skinless, boneless chicken breast meat
  • 2 tablespoons butter or margerine, melted
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup crushed Chippery Sour Cream & Onion potato chips

DIRECTIONS

  1. Put chicken breasts in a nonporous glass dish or bowl. Drizzle melted butter or margarine over chicken and season with salt and ground black pepper.
  2. Preheat oven to 375 degrees F (190 degrees C).
  3. Put potato chip crumbs in a shallow dish or bowl. Roll chicken in crumbs until well coated, then place in a lightly greased 9x13 inch baking dish.
  4. Bake at 375 degrees F (190 degrees C) for 45 minutes or until chicken juices run clear.

And for dessert....

Chippery Potato Chip Cookies

INGREDIENTS

  • 3/4 cup butter or margerine
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 + 1/4 cups all-purpose flour
  • 1 teaspoon baking soda 
  • 1 teaspoon baking powder
  • 2 cups crushed Chippery Sea Salt potato chips
  • 1 cup chopped almonds or pecans (optional)

 DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the butter or margerine, white sugar and brown sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda and baking powder; gradually stir into the creamed mixture. Finally, fold in the potato chips and nuts. Drop by rounded spoonfuls onto an ungreased cookie sheet.
  3. Bake for 9 to 11 minutes in the preheated oven until lightly golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
