You already know Chippery chips make a great snack as-is but what about using them for cooking and baking? Here are a couple yummy recipes for you to try.
Chippery Potato Chip Chicken
INGREDIENTS
- 2 pounds skinless, boneless chicken breast meat
- 2 tablespoons butter or margerine, melted
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 cup crushed Chippery Sour Cream & Onion potato chips
DIRECTIONS
- Put chicken breasts in a nonporous glass dish or bowl. Drizzle melted butter or margarine over chicken and season with salt and ground black pepper.
- Preheat oven to 375 degrees F (190 degrees C).
- Put potato chip crumbs in a shallow dish or bowl. Roll chicken in crumbs until well coated, then place in a lightly greased 9x13 inch baking dish.
- Bake at 375 degrees F (190 degrees C) for 45 minutes or until chicken juices run clear.
And for dessert....
Chippery Potato Chip Cookies
INGREDIENTS
- 3/4 cup butter or margerine
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 + 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 cups crushed Chippery Sea Salt potato chips
- 1 cup chopped almonds or pecans (optional)
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter or margerine, white sugar and brown sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda and baking powder; gradually stir into the creamed mixture. Finally, fold in the potato chips and nuts. Drop by rounded spoonfuls onto an ungreased cookie sheet.
- Bake for 9 to 11 minutes in the preheated oven until lightly golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
